Apple Honey Cake

Measurements and ingredients: 1 1/2 cups honey, 1/2 cup shortening, ?2 eggs, ?2 cups flour, ?1/2 tsp. salt, ?2 tsp. soda, ?1 tsp. nutmeg, ?1 tsp. cinnamon, ?4 cups diced apples, and ?1 cup chopped walnuts
Instructions: Cream together honey, shortening and eggs. Sift salt, soda, nutmeg, cinnamon and flour and add to creamed mixture. Stir in apples and nuts. Pour into greased 9" x 13" x 2" pan and bake at 350 degrees for 45 minutes. Remove from oven and cool.

Apple Cider Baked Beans

Measurements and ingredients:

2 cups dried white Michigan navy beans, picked over, washed and soaked (May substitute canned beans by using three 15 ounce cans of navy beans or great northern beans. Drain and rinse. Proceed with recipe.) 
1 small onion, diced
4 tablespoons molasses
8 teaspoons Dijon mustard 
2 tablespoons tomato paste
1/2 teaspoons salt
2 teaspoon black pepper
2 teaspoon dried thyme
1 small bay leaf
1 teaspoons cider vinegar
4 teaspoons soy sauce
1 1/3 cups apple cider, boiling
Boiling water 

 

Instructions:

To prepare beans: 

Wash beams in two changes of cold water. Cover with 3 inches of water and allow beans to soak overnight or 8 to 10 hours. 
Preheat oven to 250 degrees. Drain beans, reserving liquid. Bring liquid to a boil. Pour beans into a deep oven-proof casserole or bean pot. Add all the ingredients, stir and add enough reserved boiling water to cover beans. Cover the casserole with foil or the lid. Bake 6 hours, adding a little more water if necessary after 3 hours of baking.
 

Serves how many: Yield 6 servings

Applesauce

Measurements and ingredients:

8 apples, unpeeled, cored, and sliced
1 cup pure Michigan maple syrup
½ cup water
 

Instructions:


Bring syrup and water to a boil.  Add apples to boiling syrup.  Stir and let simmer until apples slices are tender.

Crescent's Apple Dumplings

Category Apples
Measurements and ingredients: 6 sheets 5 x 5 puff paste
1 crumbled spice doughnut
3 Honey crisp apples
1/2 c dried cherries
1/2c softened butter
1/2 c brown sugar
2 tsp. cinnamon
Cinnamon Sugar
Instructions: Peel core and halve the apples.
Combine the butter, brown sugar, and cinnamon.Place 1 - 2 Tbsp. of doughnut crumbs on puff paste sheet.  Place apple half on top of crumbs. 
Fill center of apple with butter / sugar mixture.
Top with dried cherries. Sprinke with cinnamon sugar.  Gently pull corners of puff paste together and pinch gaps closed to encase the apple.
Bake at 375 degrees for about 60 minutes until golden brown.
Serve with the pan juice and whipped cream.
